Winter Favourite Soup

Soups can be such a satisfying and wonderful meal. With each soups you can pack in more whole grown foods than almost any other dish. This is a soup that hits the taste buds with the wow factor. It is an absolutely wonderful soup for those cold days or evenings.

The soup is based on lentils with many other whole foods added in. From a health point of view you can’t go wrong.

Easy to make this is a dish that is diabetic friendly and safe.

Ingredients:

  • 1 packet soup mix (including yellow & red lentils & barley). Ensure no processed ingredients are used.
  • 1 large onion diced
  • 2 large garlic cloves (crushed)
  • 2 large carrots
  • 1 celery stick
  • 1 large white sweet potato (cubed)
  • small wedge of cabbage (shredded)
  • 2 chicken and 1 veg Massell stock cubes
  • Mixed herbs salt & pepper to taste

Method:

  1. Rince soup mix a few times till waste becomes clear.
  2. Boil for 1 – 2 hours until tender.
  3. Add all the other ingredients & boiling water to make 4 litres.
  4. Cook for a further 1 hour or until veggies are tender.

Makes a large 4 litre pot of soup.

Serve while hot with rice cake crackers topped with virgin coconut oil. Bon Appetite!
