Warm Kumara Salad


Finding a tasty and nutritious lunch idea for home or work can be challenging.

This recipe is easy to put together, is very satisfying.

Surprise, surprise, it is warm.

This is a meal in itself and can be especially enjoyed on those cold days when you want to enjoy something warm. Don’t be afraid to experiment with flavours and different herbs.


Ingredients:

  • 1 large kumara (sweet potato)
  • 1 tbs balsamic vinegar
  • 350g marinated diced feta
  • 250g cherry tomatoes
  • ¼ cup fresh basil-washed and chopped
  • ⅓ cup pine nuts – lightly toasted

Method:

  1. Preheat oven to 200 degrees.
  2. Peel and chop Kumara into 3cm squares.
  3. Place in a large bowl, and add 2 Tbs of the reserved oil from the feta, and stir gently. Then place on a baking tray covered with baking paper. Bake in the oven for around 45 minutes or until golden and crunchy on the edges. This can be done the night before.
  4. Place the cherry tomatoes on another tray, and bake for around 25 minutes.
  5. Spray a small fry pan with olive oil, and add the pine nuts. Roast gently.
  6. Once all ingredients are cool, place in a bowl together, adding the remaining ingredients. Stir through gently with a wooden spoon.

Eat while warm, can be re-heated in oven or in microwave. Can also be enjoyed cold.
