You can never pass by a simple veggie bake, especially when you are a bit strapped for time. You can pretty much use any vegetables you like, making most use of ones that are in season, making them more nutritious as they will be fresher, and more cost effective as veggies in season usually are.

Try to avoid using normal white potato, and use the sweet potato instead. It is lower GI and has less starch in it, therefore is better for your waist line.

This bake is great served with your favourite grilled fish or any of our patties.

Ingredients:

  • Vegetables in season cut into wedges (e.g. Sweet potato, pumpkin, carrot, parsnip, celery, mushrooms-whole, )
  • 1 large onion or two small
  • 2-3 garlic cloves-whole or crushed, what ever you prefer
  • Himalayan salt and cracked pepper
  • 1/3 cup Olive or Macadamia oil

Method:

  1. Place all veggies cubed into a greased oven dish.
  2. Garnish with onion and garlic, then sprinkle with seasoning and virgin cold pressed olive oil.
  3. Bake in moderate oven for about an hour, covering it with aluminium foil for the last 15 minutes if a less crunchy effect is desired.
