This sauce is a great additive to any meal, even can be used instead of a can to tomatoes for some of our recipes. Always try and use fresh if possible. Any tomatoes can be used for this recipe, obviously the riper they are, the richer the flavour of the sauce.

It goes nicely on top of any patties, as it adds flavour and moisture. A Thermomix can be used for this recipe, The tomatoes did not need to be peeled as it blends the skin so well. However if you do not have one, to peel the tomatoes, you just pour boiling water over the whole tomatoes, wait about 10 minutes or so, and then peel the skin off. It should slide off quite easily once you cut the skin in one spot.

Ingredients:

  • 100g red capsicum
  • 1 kg fresh tomatoes
  • 2 garlic cloves
  • 30 g of olive oil or coconut oil
  • 1 onion
  • 1 Tbs of gluten free corn flour
  • 1 tsp of mixed herbs
  • 10 g of coconut sugar
  • cracked pepper and Himalayan Salt to taste

Method:

  1. Chop onion and garlic finely and place in a pot with the oil. Simmer until golden brown.
  2. Add the capsicum also finally chopped and stir over low heat for about 5 minutes.
  3. Add peeled and chopped tomatoes and simmer for around 10 minutes or until some juice has been released from the tomatoes and they are thoroughly cooked adding the rest of the ingredients towards the end.
  4. Take off the heat, and blend the sauce to achieve the desired consistency.
