This soup is the definition of what soups are about. It has that wonderful hearty, full taste with full flavours that dance in your mouth. The best thing about this soup is it is totally sugar free. We are sure you will love this soup and it will be one of your favourites.

Ingredients:

  • 1 onion
  • 1 tbs olive oil
  • 1 medium sweet potato
  • 2 medium carrots
  • 1 stalk of celery
  • 2 Medium tomatoes
  • 1 can of chopped organic tomatoes
  • 1 heaped tbs of tomato paste
  • 1 cup of cooked chick peas*
  • 1 litre of water
  • 2 vegetarian chicken flavoured stock cubes (Massell)
  • 4 Tbs of fresh Coriander
  • Cracked Pepper to taste

Method:

  1. Brown onion with oil in a 2l pot, add chopped vegetables. Sauté for 10 min
  2. Then add water, all other ingredients except the coriander. Boil for 30 – 40 minutes to your preferred consistency.
  3. Serve in bowl and sprinkle fresh coriander for garnish.
  4. Use a can of organic chick peas or alternatively cook in traditional method by soaking overnight and boil for 1 – 2 hours.
