If you have the taste for a curry then this is your meal. Made from sweet potato and tofu with all natural ingredients and served with brown rice this meal is safe for diabetics.

It is satisfying whilst at the same time very tasty. Once you put it in your mouth it’s hard to stop.

Can be served with a salad, olives, gherkins, tomato etc.

Ingredients:

  • 1 tbs of virgin olive oil.
  • 1 large clove of garlic.
  • 1 tsp of curry powder (Adjusted to taste).
  • 1 tsp of tomato paste (sugar free).
  • 400 ml of organic coconut milk.
  • 1/2 cup of water.
  • 1 medium sweet potato.
  • 300g firm organic tofu.
  • 1 cup of fresh peas.
  • Himalayan salt to taste.
  • 2 cups of brown rice.

Method:

  1. Heat oil in large frying pan,
  2. Chop garlic and add to heated oil stirring for 30 seconds.
  3. Add the curry powder and stir through.
  4. Add tomato paste and coconut milk.
  5. Stir until well mixed.
  6. Bring to boil and add diced sweet potato.
  7. Cover and reduce heat allowing to simmer for approximately 15 minutes or until the sweet potato is soft.
  8. Add the diced tofu and peas, and simmer for another 5 minutes to allow sauce to thicken.
  9. Serve with Brown rice and add himalayan salt to taste.
