Stuffed mushroom is a fascinating dish.

Using a mushroom as a base with a tantalising mix of as grown, whole foods on top and then baked, this is a dish that is just divine.

Ingredients:

  • 4 Large mushrooms
  • 1 Onion
  • 2 Garlic cloves
  • 1/2 Red capsicum
  • 1 Handful of baby spinach leaves
  • 4 Mushroom stems
  • 2 Tbs coconut oil
  • 1 Egg
  • Handful of walnuts
  • 1/2 Tsp mixed herbs
  • Himalayan salt & cracked pepper to taste

Method:

  1. Cut the mushroom stem
  2. Wash mushroom well
  3. Chop all ingredients finely including mushroom stalk
  4. Add mixed herbs
  5. Mix with egg & coconut oil.
  6. Layer mixture onto mushrooms
  7. Bake for 1/2 hour at 200 C
  8. Salt and pepper to taste.
