Researches in a study completed in 2009 have found that a diet that is based on high-heat-treated foods increases markers associated with an enhanced risk of type 2 diabetes and cardiovascular diseases in healthy people.

High-heat-treated foods include such as deep-fried potatoes, cookies, brown crusted bread, or fried meat amongst many others. These are food which are readily available and consumed in western society.

The researches found that by replacing high-heat-treatment techniques with mild cooking techniques may help to positively modulate biomarkers associated with an increased risk of diabetes mellitus and cardiovascular diseases.
