Stawberry & Cashew Cream Cheese Cake


This is recipe for cheesecake lovers. It is made from 100% non processed ingredients and therefore it is diabetic friendly.

There is only one word for this superb cake, delicious! 

Not only does this cake taste fantastic but it delivers some fantastic health benefits. Made from walnuts & cashews, with dates, lemon, coconut oil and fresh strawberries it can only be super healthy for you.

Now you can have the best of both worlds, a cake that everyone loves, plus you can have a cake which is beneficial for you health.


Ingredients:

  • 3 cups of raw cashews
  • 2 cups of walnuts
  • 2 cups of pitted dates
  • 500g fresh strawberries
  • ½ cup lemon juice
  • ⅓ cup maple syrup 
  • ½ cup coconut oil
  • 1 tsp coconut flower 

Method:

  1. Soak cashews in cold water for 2 hours. Rinse and drain well.
  2. Line a 22cm cm round springform pan with baking paper and sprinkle with coconut flower.
  3. In a food processor combine dates and walnuts and pulse until the mixture binds together.
  4. Press evenly over the base of pan.
  5. In a clean food processor combine cashews and 200g of strawberries, lemon juice and maple syrup. Mix until very smooth.
  6. Drizzle in the coconut oil and mix until well combined.
  7. Pour filling into pan, smoothing the surface and chill overnight.
  8. Leave about 6 strawberries for decoration.
  9. Combine the remaining strawberries with 2 tsp of lemon juice and 1 tbs of maple syrup. Mix until smooth and chill well.
  10. Remove cake from pan, decorate with strawberries drizzle with strawberry sauce and serve in wedges.

This recipe makes 16 standard servings.
