Silverbeet does not have to be boring, with a tinge flavour of lemon and nuts, you will find it not only enjoyable, but good for your health.

Great served with broccoli and our ricotta patties.

Some of the benefits of silverbeet are: high iron, vitamin C, vitamin K vitamin A, vitamin B1, B2, B6, calcium, copper, phosphorus, folate, zinc, biotin, pantothenic acid, niacin, oxilic acid, and last but not least Protein.

The question is why wouldn’t you eat it?

Ingredients:

  • 2 sticks of spring onion
  • 2 garlic cloves
  • 2 Tbs of olive oil
  • 3 large mushrooms
  • 1 Tbs of lemon juice
  • 1 Large or 2 smaller bunches of silverbeet
  • 1 Handful of Pecan nuts
  • Veggie salt and cracked pepper to taste

Method:

  1. Warm up the pan with the oil, and wash all veggies thoroughly.
  2. Add roughly chopped spring onion, and garlic with the salt and pepper until the flavours get released.
  3. Add the mushrooms with the lemon juice.
  4. Finally , add the silverbeet chopped roughly. Let it simmer for a couple of minutes, stirring occasionally.
  5. Add Pecan nuts at the end.

Serve over a bed of brown rice, or accompanied by some steamed Broccoli, and our ricotta patties.
