Salmon Steak with Red Cabbage & Silverbeet Salad served with Brown Rice 5/5 (5)

If you are looking for a special treat with very nutritious benefits, well this is your meal. We have prepared a fresh, succulent salmon steak with brown rice and the family’s favourite red cabbage and silver beet salad – with home made dressing that has a real zing to it. You will love it!

It is important to know that Farm-raised salmon are fed carotenoids astaxanthin and canthaxanthin to match their flesh colour to wild salmon. These are added to the feed pellets. Without these pellets farm raised salmon would be a grey colour. It is always best to find a fresh wild salmon. It is worth paying that little extra for this special treat.

Ingredients:

  • Fresh salmon steak per person (we chose the filleted salmon)

Method:

  1. Wash the fish in warm water.
  2. In the meantime, warm up the grill pan or oven, depending what you have and spray with olive oil. Place the washed fish on the grill, sprinkle with seasoning, cook on moderate heat for about 5-10 minutes, depending how well you like it, then turn once to cook the other side. Avoid turning again, as the fish may fall apart.
  3. Serve on a warm plate, along with the cooked brown rice and the Red Cabbage & Silverbeet Salad. Use Himalayan salt and cracked pepper and drizzle with fresh lemon to taste.
  4. Can also be served with some condiments, such as stuffed capsicum, olives or pickled cucumbers, as long as the majority of the plate is covered with salad.
