Even in the winter months it is great to have a salad accompany any meal.

This salad is a little special as the rocket adds a slight stronger flavour to your ordinary salad. Using a slightly more flavoursome dressing therefore goes well with this type of salad, and it helps to complement the slightly bitter tinge to the rocket.

Ingredients:

  • 2 handfuls of rocket leaves-preferably organic-washed well
  • 5 cherry tomatoes, cut into quarters
  • ½ red capsicum
  • 1 ripe avocado, peeled and cut into squares
  • ¼ red or brown onion sliced thinly
  • ½ cucumber-washed
  • ½ block of feta cheese of your choice
  • a handful of sunflower seeds
  • Himalayan salt and cracked pepper to taste
  • 4 Tbs of the Dijon mustard salad dressing made ahead

Method:

  1. Place all ingredients in a salad bowl. Mix together and enjoy .
