This is a sensational Rich coconut chocolate slice recipe. It’s the kind of cake that you enjoy, without even a glimpse of guilty feelings, as there is nothing to feel guilty about.

The rich flavour gives you an instant WOW feeling, and is a perfect treat, perhaps served warm with a dollop of Greek Yoghurt for dessert.

Made from coconut flour which is gluten free, high in fibre and high in protein. With a GI of only 36 it is low in digestible carbs so it does not spike sugar levels.

Ingredients:

  • 70 g raw cacao powder
  • 130 g coconut oil
  • 3/4 cup maple syrup
  • 50g coconut flour
  • 1/3 cup hazelnuts-roasted and roughly chopped
  • 4 organic free range eggs – separated
  • small pinch of sea salt

Method:

  1. Grease a 24x18cm slice tin with coconut oil. Preheat oven to 160 C.
  2. Combine the cacao with the melted coconut oil.
  3. Whip egg yolks with maple syrup until well mixed and creamy.
  4. Add the chocolate mix to maple/egg mixture and stir well.
  5. Gently fold in the flour and the nuts till well combined.
  6. Add salt to egg whites and whisk to stiff peaks.
  7. Gently fold the egg whites into the slice mix and transfer to slice tin.
  8. Bake in pre-heated oven for approximately 20 minutes(may be more depending on your oven).
  9. Remove from oven and allow to cool a little before turning out onto a rack to cool completely.
