This cake is made from whole foods with your choice of plums. The plums add a wonderful taste plus some great whole foods benefits.

Ingredients:

  • 1/2 kg Spelt Flour
  • 14g Yeast
  • 3/4 cup of Almond Milk
  • 1/4 cup of Olive Oil
  • 120g of Coconut Sugar
  • 1 whole Egg
  • 3 egg Yokes
  • 1 tsp Vanilla Essence
  • Pinch of Himalayan Salt
  • 2 kg Plums

Method.

  1. Add all ingredients starting with liquids into bread-maker. Set for dough and mix. The dough during this process will be mixed and will also rise.
  2. Once the bread-maker process has completed, using a rolling pin, roll dough to a 2cm thickness.
  3. Place the rolled dough into lamington pan/s.
  4. Cut plums in halves and pit. Place plums on top of the dough. To each plum add a touch of coconut sugar. Bake in 160 – 170c (Moderate) for a period of 30 minutes.
