Pancakes (Spelt Flour)

If you are looking for a little special treat for that weekend breakfast by the pool, try this recipe, as it will leave you feeling satisfied and not feeling guilty, as all the ingredients are diabetic friendly and with as little processing involved as possible. They are packed with protein and the goodness of fruit.

Ingredients:

2 organic and free range eggs(separated)

pinch of Himalayan salt

½ cup of Wholemeal Spelt flour

1/8 tsp of Baking powder

1 cup of ricotta or cottage cheese

Lemon rind of half a lemon

1 tsp of natural Vanilla essence

1 ½ Tbs of organic honey or Organic Maple Syrup (not the processed one)

Grape seed or coconut oil for frying

Cinnamon

Method:

Beat the egg whites with the pinch of salt, and put aside till later

Beat the egg yolks with the honey or maple syrup, adding cheese, lemon rind, vanilla and finally sifted flour and baking powder.

Fold in the egg whites.

Using a large spoon, scoop the mixture up, and place on a warm fry-pan, and let it rise slightly, flipping when golden brown.

This amount of mixture will make about 8 pancakes, usually enough for 2-3 people.

Serve topped with organic yoghurt, walnuts, banana, frozen or fresh blueberries, and cinnamon and some extra Maple syrup.
