Mushroom Sauce (Dairy Free) 4.57/5 (7)


A full flavoured exquisitely tasting dairy free mushroom sauce that can be used as an addition to many meals particularly rice dishes.


Ingredients:

  • 1 onion.
  • 500 grams of button mushrooms.
  • 1 cup fresh stock or 1 stock cube (Massel contains no chemicals).
  • Juice from 1/2 a lemon.
  • 1/2 a teaspoon of agave or other natural sweetener.
  • 1 tablespoon of corn flour.
  • 1/2 cup of coconut cream.

Method:

  1. Brown chopped onion in a small amount of olive oil.
  2. Clean the mushrooms and chop into slices and then add to onion.
  3. Sprinkle with lemon juice to prevent the mushrooms blackening.
  4. Sauté for 5 minutes.
  5. Add stock (1 cup of fresh stock or 1 cup of warm water with stock cube).
  6. In a glass mix the corn flour and 1 tablespoon of cold water until smooth and add to mushroom sauce.
  7. Boil till thickened (usually around 5 minutes).
  8. Once thickened remove from heat and add coconut cream.
  9. Add Cracked Pepper to taste.
