If you are a lover of Italian cuisine, you will now not feel deprived with this healthy alternative to it. Eating this soup, you will not only feel warm and fuzzy in your tummy, but you will be reaching for more, and will not have to worry about the waist line, as it will thank you.

Ingredients such as the fresh cabbage and celery are great vegetables to include for greater weight loss. Fresh herbs on top will add a nice touch and extra nutrition.

To be enjoyed on a cold winters day- a guilt free treat ! And the best part is you can go for seconds as many times as you like.

Ingredients:

  • 1 packet of dry Italian soup mix-a mixture of beans and lentils-soaked overnight for quicker cooking time
  • 2 Tbs of Macadamia oil
  • 1 onion
  • 2 carrots
  • 1 sweet potato
  • 2 celery sticks
  • ½ a shredded fresh cabbage
  • 2 L of water brought to boil
  • 2-3 stock cubes-such as Massell
  • 2-3 Tbs of pure tomato paste-no added salt or sugar
  • 1 heaped tsp of mixed or Italian herbs
  • 1/3 of a packet of spelt spaghetti, broken up into 4 shorter pieces
  • fresh herbs or celery leaf for garnish

Method:

  1. Drain the water from the beans mixture and wash thoroughly until water runs clear. That helps to rid of some of the toxins that produce flatulence.
  2. Place in a large pot (around 4 L), add the Macadamia oil, and chopped onion and simmer for a couple of minutes to release some of the flavours.
  3. Add the rest of the cubed vegetables and the shredded cabbage last as it takes the shortest time to cook.
  4. Add the boiling water and stock cubes, and let simmer for about an hour or so. By keeping it covered with a lid, you will be speeding up the cooking as you keep the heat inside the pot.
  5. Once most of the cooking has taken place, add the tomato paste, herbs and broken up pasta for the last 10-minutes, stirring occasionally.
  6. Add cracked pepper and vegetable salt or Himalayan salt to taste.
  7. Serve garnished with fresh herbs or celery leaves.
