Who doesn’t like the wonderful summer flavours of fruit.

If you are like most people you love the salads in the summer months and what a sensational salad this is. Packed with rich mango flavours that tickle your taste buds, this salad is certainly a favourite.

Mangoes are rich in vitamin A and vitamin C. They provide more beta-carotene than any other fruit. This is a very powerful anti-oxidant that can help protect the body from disease and signs of ageing by assisting with the growth and repair of cells. Mangoes are also rich in potassium. The good news does not stop there. They are an ideal snack with half a mango containing only 60 calories with a low GI making this fruit ideal for diabetics.

Ingredients:

  • 2 Mangoes-fresh and ripe, peeled and cut into squares
  • 3-5 large Basil leaves, chopped
  • a rind of 1 Lime
  • juice from 1 Lime

Method:

  1. Gently mix all ingredients in a bowl.
  2. Can be served with a lovely freshly grilled salmon or free range chicken.
