Mojito


There is nothing nicer than a cold refreshing drink. This is a recipe that will leave you feeling refreshed and rejuvenated. Made from whole food ingredients this is a drink that will surpass the taste of any bottled drink and is healthy as well. The ingredients used will give you many health benefits.

 Ingredients:

  • 2 cups of ice
  • 6 fresh mint leaves
  • small piece of fresh ginger
  • 1 small lime, cut into quarters
  • 2 tbs of coconut sugar
  • 400 mls of mineral water
  • a couple of mint leaves for garnish

Method:

  1. Place ice cubes in Thermomix and blend for a couple of seconds to crush the ice a little bit. Alternatively, place ice cubes in a plastic bag and break up the cubes with a hammer.
  2. At the bottom of a glass, place a small piece of fresh ginger, then cover with some ice, then add half the lime and a couple of mint leaves and half the coconut sugar.
  3. Then crush a bit using a blunt instrument to release the flavours.
  4. Add some more ice and cover with the mineral water.
  5. Finally garnish with a fresh whole pint leaf. Enjoy with a straw.

Makes two servings.

For best results, use a tall glass, and sip away. Enjoy .
