Who says eating healthy means missing out on your favourite treats?

Here at Diabetic Health Clinic, we are all about a lifestyle change, which of course must include some treats as required. This recipe is one that has been modified to suit our new lifestyle, and is still delicious. Perfect even straight from the oven, with a beautiful freshly made almond milk or a refreshing tea.

We trust that you will enjoy these and their benefits as much as we did.
This portion makes around 30 biscuits.


Ingredients:

½ cup coconut oil
½ cup coconut sugar
½ tsp pure Vanilla Extract
4 free range eggs
1/8 tsp Himalayan salt
1 cup coconut flour
½ cup raw cacao nibs-avoid using the unhealthy version of choc chips
¼ cup arrow root or GF corn flour
½ cup shredded coconut


Method:

1. Heat oven to 170-200 C depending on your oven.
2. Mix coconut oil, sugar, vanilla, eggs and salt in a mixing bowl till well combined(being winter at the moment, I found the Coconut oil a bit hard to blend in with the eggs, so you might chose to melt it a little first).
3. Then add all the dry ingredients and mix with a wooden spoon until mixture well combined
4. Using a table spoon, scoop up a spoonful at a time into the palm of your hand, and kneed/roll around till well combined and smooth. Then flatten a bit and place on an oven tray covered with some baking paper. Continue this until all mixture is used up. Then at the end, press the biscuits with a fork to decorate. Place in a warm oven and bake 10-15 minutes , or until golden brown.


This recipe makes about 20 standard size cookies
