Comfort foods that are warm and help us to relax are always enjoyed and appreciated. This dish is particularly good as it provides the good carbohydrates in the form of brown rice cooked rice . Plus you have all the health benefits of super foods such as chickpeas and spinach as well as sesame seeds.

Now there is no excuse for eating poorly.

Spinach showed evidence of significant protection against the occurrence of aggressive prostate cancer. Cooking spinach for only 1 minute will not harm its vitamin and mineral contents but will reduce the concentration of oxalic acid.

Chickpeas are great for diabetics as they help to stabilise blood sugar levels, and are low GI. They are also packed with protein, fibre, iron, Manganese-great for energy levels, can lower LDL-bad cholesterol and is great to aid in weight loss.


Ingredients:

  • 1 brown onion-chopped
  • 3 garlic cloves-crushed
  • 2 Tbs of Grape seed oil
  • 2 carrots-cubes-preferably organic
  • 1 celery stick-cubed
  • 1 cup of baby spinnach
  • 2 Tbs of Soya Souce-make sure there’s no added sugar
  • 2 Tbs Sesame Seeds oil
  • 2 Tbs sesamy seeds
  • 1 can of chickpeas-drained
  • Hymalayan salt and cracked pepper to taste

Method:

  • In a medium sized pot, brown the onion and garlic with the oil till golden in colour and the aromas are released.
  • Add the carrots, celery and cook for a few minutes till carrots become tender, adding a little water if starting to stick.
  • Add all other ingredients, adding in the spinach last. Cook for a further minute or so.
  • Serve warm with a side salad-we served it with coleslaw.
