chia seed cake


This is an amazing recipe, lovely and moist, chocolaty, high in fibre and protein and just super yummy. It is safe for diabetics. Great to serve warm with a dollop of Greek yoghurt on the side, making a wonderful dessert. It resembles a pudding recipe. It’s very simple and quick to make, so a great alternative for a busy household.


Ingredients:

  • 4 Tbs Chia seeds-soaked in 1 cup of water for 15 minutes
  • ½ cup Raw Cacao
  • 125 g of Coconut Oil
  • 5 medium eggs
  • 1 cup (175g) Almond Meal
  • 1 cup Coconut Palm Sugar
  • pinch of salt
  • 1 tsp Bicarb Soda

Method:

  1. Preheat oven to 180 C.
  2. Line spring form cake tin with a non stick baking paper.
  3. Soak the chia seeds stirring frequently.
  4. Place all ingredients in a bowl and whisk to combine well, and to break up any lumps (at least 1 minute).
  5. Pour into lined tin.
  6. Bake in oven for 30-35 minutes or until it springs back when pressed in the middle.
  7. Let the cake cool for 5-10 minutes in the tin, then gently tip out onto a wire cooling rack-be very careful with this. The centre is quite soft so be gentle with it.
  8. Add the dollop of Greek yoghurt, ensure you don’t use low fat as this is loaded with carbs which equals sugar.
