This Cauliflower Soup is made for health. No sugar, no creams, all goodness. It has a distinct cauliflower taste, with touch of coconut taste. This is sure to please and is perfect on its own or as a part of a multiple course meal.

Ingredients:

  • 1 head of cauliflower
  • 3 carrots
  • 1.5 litre of water
  • 2 vegetarian chicken flavoured stock cubes (Massell)
  • 1/2 cup of coconut cream
  • Parsley to garnish

Method:

  1. Place water, chopped cauliflower and carrot in a mid sized pot (2 – 3 litres)
  2. Add stock cubes and bring to boil. Simmer for 15 min or until vegetables are tender.
  3. Remove from heat, blend for a couple of seconds leaving chunks to enjoy their flavour.
  4. Add coconut cream and cracked pepper to taste.
  5. Garnish with fresh parsley.

Serve hot.
