Refreshingly Sweet Dish complimenting any main meal.


Ingredients:

  • 1/2 a head of Cauliflower.
  • 2 handfuls of Raw Cashews.
  • 2 Tablespoons of Currants.
  • 1 Tablespoon of organic Soya Mayonnaise.
  • Pinch of Himalayan Salt.

Method:

  1. Pre-heat oven to 180 degrees Celsius.
  2. Place cashews on oven tray and dry roast for up to 10 minutes making sure the nuts don’t burn.
  3. Chop cauliflower into small 1cm size pieces.
  4. Add all other ingredients adding the roasted cashews last just before serving.

Mix together and enjoy.
