Who says being healthy has to be boring or tasteless.Next time you have visitors call you saying they are on their way to pop in for a visit, just whip up this beauty in no time at all and watch their faces in amazement when you tell them you made it yourself, and it’s healthy.You only need a few ingredients and a good quality blender and off you go.

It also presents its self well along with some healthy crackers or flat Turkish bread that you have made earlier. Its flavour is quite tangy, so it goes well with a rather plain biscuit.

Ingredients:
150g Semi sun-dried Tomatoes
1 clove of Garlic
1 large Red Capsicum
160g unsalted Cashews
40g Olive Oil
40g White or Apple Cider Vinegar

Method:
Place all ingredients into your mixer/blender and mix on turbo speed for 5-10 seconds. You are after a rough but even chopped mixture.
