Broccoli Soup 5/5 (10)


This is a favourite, made without creams or flavour enhancers, this soup has a full rich flavour that will satisfy the fussiest taste buds.


Ingredients:

  • 1 onion
  • 1 tbs olive oil
  • 2 medium heads of broccoli
  • 1.5 litre of water
  • 2 vegetarian chicken flavoured stock cubes (Massell)
  • 1/2 up of coconut cream

Method:

  1. Brown onion with oil in a medium sized pot, (2-3L), add chopped broccoli including the core.
  2. Then add water and stock cubes, boil for 10 minutes.
  3. Take off heat source and blend to create a smooth finish.
  4. Add coconut cream and cracked pepper to taste.

Serve hot.
