This is a great alternative snack for those lazy afternoons, when you don’t quite feel like anything too heavy yet, but wouldn’t mind having a little healthy snack.

This recipe will also make a great entertaining entrée that your guests will love and keep talking about.

Ingredients:

  • 1 clove of garlic
  • leaves of about half a bunch of fresh basil
  • 100 g of pine nuts (can be lightly roasted, but don’t have to be)
  • 60 g of raw, unsalted cashews
  • 60 g of olive oil
  • 2 Tbs apple cider vinegar
  • 3 Tbs of freshly grated parmesan cheese (optional)
  • Himalayan salt and cracked pepper to taste
  • 1 ripe tomato sliced

Method:

  1. Place all ingredients in a blender or food processor and pulse up to 4 times, making sure some small chunks are still present.
  2. Serve with plain rice cakes , topped with freshly sliced tomato.

Enjoy and watch it disappear off the plate.
