This dish can be used wherever you would use potatoes or rice. It has a wonderful taste, is filling and satisfying. Barley has been shown to be extremely beneficial for type 2 diabetics so this is a dish that should be on your menu often. Mixed with vegetables, preferably organic, this dish can only be one thing and that is good for you.

Ingredients:

  • 200g Barley
  • 1 Onion
  • 1 Carrot
  • 1/2 Large red capsicum
  • 4 Tbs of virgin olive oil
  • 1 Vegetable stock cube (Massel)
  • 150g Savoy cabbage
  • Himalayan salt & cracked pepper to taste

Method:

  1. Cook barley with the stock cube until soft.
  2. Slice carrot, onion, capsicum and shred the cabbage.
  3. Fry lightly in olive oil until almost soft.
  4. Mix vegetables with the cooked barley.
  5. Salt and pepper to taste.
  6. You can substitute or add any vegetables that you enjoy.
